Colby appeared in all 14 of Stanford’s games, catching ten passes for four touchdowns and 97 yards in 2017 in his freshman year at Stanford. Parkinson played in 13 games (nine starts), catching 29 passes for seven touchdowns and 485 yards as a sophomore in 2018.
Parkinson had six catches for four touchdowns and 166 yards in a game versus Oregon State on November 10, tying the Stanford record for most touchdowns in a single game for a tight end. Colby acquired All-Pac-12 Conference honorable mention. Colby had 48 catches for one touchdown and 589 yards after his 2019 junior season, Parkinson disclosed that he would forgo his senior season and enter the 2020 NFL Draft.
The Seattle Seahawks selected him in the fourth round with the 133rd overall pick in the 2020 NFL Draft.
