Schultz attended South Jordan’s Bingham High School. He was a member of the Miners’ basketball and football teams. He caught 31 passes for 512 yards and nine touchdowns as a senior. He had 76 receptions for 1,120 yards and 12 touchdowns in high school. In January 2014, he committed to play college football for the Stanford Cardinal.

Stanford University offered Schultz a football scholarship. He redshirted as a true freshman in 2014 after seeing no action. As a redshirt freshman in 2015, he appeared in all 14 games as Austin Hooper’s backup, catching 10 passes for 121 yards and one touchdown. After Hooper declared for the NFL Draft as a sophomore in 2016, he was named the starter.

He appeared in all 13 games, recording 23 receptions for 222 yards and one touchdown (fourth on the team). He helped block for running backs Christian McCaffrey and Bryce Love, earning honorable-mention All-Pac-12 recognition. Before the 2017 season, he was named to the John Mackey Award watch list. In 13 games, he was mostly used as a blocker, catching 22 passes for 212 yards and three touchdowns (fifth on the team) and assisting running back Love in rushing for 2,118 yards. He was named to the Pac-12 First Team and declared for the NFL Draft after the season.

After the unexpected retirements of Jason Witten and James Hanna, the Dallas Cowboys selected Schultz in the fourth round (137th overall) of the 2018 NFL Draft to improve the depth at tight end.He was the backup tight end to Geoff Swaim and Blake Jarwin. Schultz surpassed Jarwin on the depth chart after Swaim went down with an injury in Week 11 and was mostly used for blocking. He started seven of the eleven games he appeared in, including both playoff games. He had 12 receptions for 116 yards and helped running back Ezekiel Elliott win the NFL rushing title.
