Henry was a part of one of the most memorable plays in Arkansas football history in 2015. On a fourth-and-25 play in overtime against Ole Miss in the rivalry game, Henry caught a pass from quarterback Brandon Allen and, seeing that he was going to be tackled short of the first down marker, flung the ball backward as a lateral to running back Alex Collins. Collins caught it on the bounce and ran it 31 yards for a first down. This set up a touchdown and successful two-point conversion to seal the victory. The play’s uniqueness prompted extensive media coverage and replays.

In the 2015-2016 season, he won the John Mackey Award as the best tight end in the country and was a consensus All-American. He helped Arkansas win back-to-back bowl games in consecutive years for the first time in program history, defeating former Southwest Conference rival Texas Longhorns in the 2014 Texas Bowl and defeating Kansas State Wildcats in the 2016 Liberty Bowl. Henry declared his intention to enter the 2016 NFL Draft on January 4, 2016.
