Jacob redshirted his freshman year at first when he walked on at Western Kentucky. Thereafter, Jacob transferred back to his home state and entered the UCF Knights football team. In both the 2019 and 2018 seasons Jacob played in all 13 games and in 2019 he recorded 448 yards and 1 touchdown on 19 receptions. Harris racked up 30 receptions scoring 8 touchdowns (3rd most in the American Athletic Conference) and gaining 539 yards in his 2020 senior campaign.

In the fourth round (141st pick) of the 2021 NFL Draft Jacob was drafted by the Los Angeles Rams. On June 4, 2021, Jacob signed his four-year recruit contract with the Rams. After Jacob suffered a season-ending ACL and MCL injury in Week 9, he was placed on injured reserve on November 9, 2021.

The Rams won Super Bowl LVI against the Cincinnati Bengals without Harris and he converted from tight end to wide receiver on July 28, 2022. The Rams waived him on August 30, 2022, and the next day he signed to the practice squad. On September 17, 2022, Jacob was elevated to the active roster and reverted back to the practice squad after the game.
