In 2017 Poe spent one year at Hutchinson, playing as a fullback prior to moving to play for the Division II Lenoir–Rhyne Bears. Jason changed to being an offensive lineman with the Bears. Jason played in 13 games in 2018 with Lenoir–Rhyne while assisting them to rank top-10 nationally in rushing yards per game and scoring offense, being named the recipient of the Jacobs Blocking Trophy for best blocker in the conference and a second-team All-American, and first-team all-conference and all-region.
In 2019 he was named a first-team all-region, All-American, and first-team all-conference besides playing through injury and began every game and repeated as the Jacobs Blocking Trophy winner. Due to the COVID-19 pandemic, Jason sat out the 2020 season, later transferring to Mercer for his final season. In 2021, Jason was named first-team all-conference.
Jason acquired an associate’s degree in one year, a bachelor’s degree (in information technology) in two, and later a master’s degree with a perfect 4.0 GPA as he maintained high grades in school off the field.
