Keith was a three-year starter as a defensive end and tight end at Downingtown High School. Keith was recruited at UCLA by Gary Bernardi to play tight end. Due to his assistance with the scout team, he was awarded the Charles Pike Memorial Award after redshirting his first year. In 2002 Keith played in nine games starting three of them. Also, that season, Keith took snaps as a blocking running back. Keith plowed into the back of a car on his motorcycle in April 2003, completing his playing career.

In 2005 Keith’s coaching career commenced at UCLA while he was still a student there. Keith coached the tight ends for Wagner College in 2006. Afterward, Keith moved to the University of Redlands where he worked as the offensive line coach in 2007 and 2008. Keith worked as the tight ends coach in 2009 and the offensive line coach in 2010 and 2011 for the next three seasons at the University of San Diego.

In 2012 Keith made the jump to the NFL where during the 2012 and 2013 seasons he worked with the Seahawks including Seattle’s Super Bowl XLVIII Championship. Keith went back to the NFL to coach with the Falcons after spending the 2014 season back at the collegiate level, working as the Spartans’ run game coordinator and offensive line coach. Keith spent 2017 working as the team’s running backs coach and 2015 and 2016 as Atlanta’s assistant offensive line coach.

Keith began working for the Tennessee Titans as the offensive line coach in 2018. Mike Vrabel the Titans head coach disclosed on January 9, 2023, that Carter had been sacked. The New York Jets reported on January 24, 2023, that Keith was employed as the team’s run game coordinator and offensive line coach.
