Noah was rated a four-star recruit and committed to Mississippi State to play college football. Afterward, Noah was ruled academically unqualified to play college football, and after the departure of Brian Baker Mississippi State’s defensive line coach, he decided to join the University of Idaho, where his dad was coaching. Noah was not permitted to play for the Vandals until 2019. In his first season playing he suffered a torn MCL and a torn ACL.

During his redshirt junior season, Noah played in all six of the Vandals’ games, which due to the COVID-19 pandemic in the United States were shortened and played in the spring of 2021. Noah played in 10 games and completed the season with one fumble recovery, one sack, 46 tackles, and 6.5 tackles for loss as a redshirt senior. Noah declared that he would be entering the 2022 NFL Draft after the end of the season.

After the 2022 NFL Draft, Ellis signed with the Philadelphia Eagles as an undrafted free agent on April 30, 2022. On July 26, 2022, Noah was waived, and placed on the reserve/non-football injury list. Elliss was waived/injured by the Eagles on August 19, 2023, and put on injured reserve. On August 28 Noah was released and on October 24 he was then signed to the Eagles practice squad. On January 18, 2024, Noah signed a reserve/future contract.
