He started his coaching career in 2008 as an assistant wide receivers coach with the Tampa Bay Buccaneers under head coach Jon Gruden. In 2009, he served for the Florida Tuskers of the United Football League (UFL) as the quality control/wide receivers coach. With Florida, he first worked under offensive coordinator, Jay Gruden. In 2010, McVay was hired by the Washington Redskins as the assistant tight ends coach under head coach Mike Shanahan. The next season, he was upgraded to tight ends coach, a role he held through the 2013 season.

On 14th January 2014, he was upgraded to offensive coordinator by new Redskins head coach Jay Gruden. On 12th January 2017, he was hired as head coach of the Los Angeles Rams at the age of 30 years, 354 days, becoming the youngest since the Rams hired 27-year-old Art Lewis in 1938 and the youngest head coach in the NFL’s modern era, overtaking Lane Kiffin, who was 31 years, 259 days old when hired by the Oakland Raiders in the year 2007.

He hired Matt LaFleur as his offensive coordinator on February 8, 2017. Previously, they worked together in Washington when LaFleur was the quarterbacks coach and McVay was the tight ends coach. McVay made his regular-season head coaching debut against the Indianapolis Colts on September 10, 2017, leading the Rams to a 46–9 victory in a home game at the Los Angeles Memorial Coliseum. McVay was named NFL Coach of the Year by the Associated Press on January 19, 2018.

On January 30, 2018, Matt LaFleur left his position as an offensive coordinator with the Rams to move up to play caller as offensive coordinator for the Tennessee Titans but was not replaced. The Rams defeated the Cincinnati Bengals by a score of 23–20 in Super Bowl LVI, rallying with a late touchdown to win, making McVay the youngest head coach (36 years old) to win the Super Bowl in NFL history.
