At first, Ashtyn joined California’s track and field team as a walk-on and after a tryout in the spring of his freshman year, he just joined the football team. Ashtyn worked his way up the depth chart to become the starting safety together with Jaylinn Hawkins in the second half of his redshirt sophomore year.

Ashtyn joined his senior year on the watchlist for the Paul Hornung Award and ESPN analyst Mel Kiper rated him as the third-best safety prospect in the 2020 NFL Draft. In his senior season, Ashtyn had a fumble recovery, two forced fumbles, four passes defended, two interceptions, and 55 tackles. Ashtyn completed his collegiate career with three fumbles recovered on defense, two forced fumbles, 12 passes defended, 166 tackles, and seven interceptions while returning two punts for 33 yards and 70 kicks for a touchdown and 1,604 yards.

As a senior, Ashtyn was named second-team All-American and won the Pac-12 110-meter hurdle title in track and field. In the 60-meter hurdles, Ashtyn was also named an NCAA Indoor All-American. In the 2020 NFL Draft Ashtyn was drafted by the New York Jets with the 68th overall selection. In exchange for a pick, the Jets formerly traded Leonard Williams the defensive lineman to the New York Giants.

Ashtyn recovered a fumble forced during the 34–28 loss by teammate Marcus Maye on wide receiver Keenan Allen at the goal line and led the team with 12 tackles against the Los Angeles Chargers in Week 11. On December 12, 2020, Ashtyn was put on injured reserve and he was placed on injured reserve on September 1, 2021. On October 2 Ashtyn was activated.
